“Bleach” is a restaurant that pays homage to coastal central and South American flavors. It brings together the best of the taqueria, the cevicheria and the tapas bar. We will source our ingredients as close as possible to our location. We serve an elevated version of “street food” which has become increasingly popular of the past couple of years. The food will be familiar yet unique with its own personality. All food is served tapas style, as small portions that allow our patrons to enjoy a large variety of flavors and ingredients. We offer an extensive collection of tequilas along with a beer list consisting mainly of South American and Californian beer. We create a sense of community throughout our day, encouraging families and large groups to take a breather from their busy schedules and enjoy the pleasure of conversation, conviviality, and hospitality over lunch and dinner. By night we will create a thriving bar scene by encouraging adults to come enjoy music upstairs in our open air rooftop.

Our objective is to create a contemporary Latin tapas restaurant in Coastal Orange County. We will spearhead a new culinary movement in an area completely devoid of such a thing. In so doing we aspire to spark a new trend in dining. Southern Californians will know us for our clean food and fresh ingredients. People will not only come to dine here because of its atmosphere and staff, but because the restaurant provides a sense of clean living. We will focus on local farms raising humane animals and local fishermen to supply our proteins. A heavy focus on local products is a must. We will show guests how to enjoy seafood in a new way by introducing different fish as well as new cooking styles. Using this concept will spark a new interest in eating as an extracurricular activity, not a necessity.

We will provide an environment for people to come in for a casual lunch or dinner as well as a place for a great night out with friends. Having a seasonal menu with signature dishes will entice customers to constantly come by and see what’s new or come in for their favorites. The idea of an ever-changing menu is something that intrigues people. It creates the opportunity to constantly experience a new flavor or texture on the palate. These small plates and ever changing flavors will afford an opportunity for anyone to stop by for a great experience, encouraging them to sit down for dinner with their guests.

One of the great things about tapas style cuisine is that it lends itself to alcohol very well. Guests can enjoy multiple dishes as well as multiple cocktails without feeling bogged down like one might with rich food and heavy wine. The wines are lighter and easier to drink, and affordable for everyone. Wines by the glass will be offered for those who aren’t interested in experiencing just one flavor with their meal. Another guiding point will be suggested wine pairings. We will showcase an expansive list of tequila that will be offered in flights for the enthusiast. A seasonal cocktail list will showcase the local produce that is available to Southern Californians. These cocktails will be unique and easily paired with the dishes we will create. Having the option to pair a cocktail with one’s dinner is a relatively new, but unrealized idea that we will feature. This environment will keep our local guests coming back as well as attracting first timers from all over.

Nick Cataldo (@nickcataldo1338) will play the role of chef/owner. With experience in some of the finest eating establishments in both California and in New York. Nick has opened some very successful restaurants on both sides of the country. Having been involved with the Aqua Corporation in San Francisco and the Patina group in Southern California he has been educated on how to run a successful business under great leadership. He has also been a part of restaurants like the Waverly Inn and Gilt restaurant at the Palace hotel in New York. While these restaurants are differing in style, they all have shown him how to execute an idea and see to its fruition.

His 15 years managing and cooking in restaurants in Manhattan and California have taught him several things about restaurants. One of the most important is this: people drink. People love their cocktails and will go out of their way for a specific one, The Creation of a beloved cocktail menu along with a diverse and unique food menu will catch the eyes and hearts of locals and keep those that don’t live in the area talking about it and coming back for years to come.

Our success will rely on us providing a service that doesn’t exist in the area. BLEACH RESTAURANT will ultimately be the best dining experience in Southern California.
